The Michelin Guide has unveiled its second edition for Slovenia, featuring 53 restaurants, including one new one-star restaurant and one new Green Star restaurant.
The tiny Alpine nation continues to punch well above its weight in terms of gastronomy, with a thriving fine-dining scene and a farm-to-table movement that deserves international recognition. The addition of another star to the guide for Slovenia recognises the wealth of culinary talent working in the country.
There is no surprise that chef Ana Roš’ restaurant Hiša Franko maintained its two Michelin stars, which is just as well as the ink was hardly dry on her and staffs’ tattoos to commemorate the achievement.
The new addition to the star listing is Gostišče Grič, run by owner/chef Luka Košir. Based in the small village of Šentjošt nad Horjulom, in the heart of the agricultural area, Košir has long forged a path for organic gastronomy, tending his own restaurant garden and raising his own birds for the kitchen.
Other restaurants to be awarded stars in the guide to Slovenia include Gostilna Pri Lojzetu, Dam, HišaDenk, Restavracija Atelje and Vila Podvin, which was also awarded a Green Star.
