Portuguese chef, Nuno Mendes, has penned a restaurant cookbook capturing the food and atmosphere that have made his eponymous London restaurant, the Chiltern Firehouse, a steadfast favourite since its inception.
Known as something of a celebrity hangout since its opening in 2013, the converted fire station restaurant soon become a magnet for A-listers, not simply for the buzzy atmosphere, but also for Mendes' confident, flavourful food with a US spin.
The book collects recipes for Mendes' signature classics, from crab doughnuts with coral dusting, monkfish cooked over pine and char grilled Iberica pork with courgettes to brunch recipes and elegant snacks like cauliflower florets with truffle puree and desserts like frozen apple panna cotta. A selection of recipes for fine looking cocktails photographed in situ completes the index, along with other shots capturing the New York brasserie styled interiors.
The Lisbon-born chef, once described by Gordon Ramsay as a "chef's chef", arrived in London just over a decade ago following his formative years in the US, Japan and around the globe. Starting out with his pioneering domestic pop up, The Loft Project, he has since made his name with Viajante restaurant, which won a Michelin star in the first year of opening, before taking on The Chiltern Firehouse, and now, his newest venture, Taberna do Mercado, drawing on his Portuguese roots.
