At the Bocuse d’Or Final 2023, held, as ever, in Lyon, the competing chefs had to adhere to two themes in their creations.
For their plates, they had to devise a 'Feed the kids' menu based on marrow, which had to include one egg per portion.
The platters were to be based on monkfish, a fish known for its unattractive appearance, but also for the finesse and quality of its flesh. Each chef could work with two monkfish and six king scallops to create a hot dish for 15 people.
The fish had to be presented on two separate platters and be accompanied by two garnishes composed exclusively of vegetable products. In addition, a third ‘stew’ garnish was required to be presented in individual bowls. This garnish was required to be a combination of a vegetable emblematic of the team's country with mussels and croutons placed on top.
Take a look at all the platters and plates from the Bocuse d'Or Final 2023 below.
