René Redzepi is bringing back the Noma burger at a new restaurant, POPL, after a hugely successful summer season when the famous New Nordic restaurant welcomed drop-in customers for wine and burgers.
It's been a difficult year for all restaurants, even the world-renowned Noma, which closed temporarily, and its sister restaurant 108, which shut its doors permanently in September. However, the pivot to burgers represented a great success for the team and proved hugely popular. So much so that it has inspired a team of Noma veterans to open a permanent burger joint for everyone to enjoy.
Redzepi wrote on Instagram: "'This is either the best idea in the world, or the worst' - that was my friend's response to me when I told him that the Noma burger is back! That we're opening @poplburger as a neighbourhood place for everyone, in the middle of a world wide pandemic. BUT, it's happening and we're very proud [of] it."
The menu is simple: burgers – organic Danish beef and vegetarian or vegan patties, handmade in the Noma fermentation lab – seasonal sides, ice creams and a list of wines, beers, cocktails and non-alcoholic beverages. There’s also a takeaway option for those who want to eat at home or sit at the harbour.
An opening date of 3 December has been slated, and the team are working hard bring the Noma burger back to life at POPL.
