Ivan Brehm
Chef Ivan Brehm of Nouri in Singapore advocates new perspectives on identity via his ‘crossroads cuisine’ concept, which highlights the similarities and connections we all share across cultures.
Dominique Crenn
Dominique Crenn, chef and owner of a series of revered venues in San Francisco, including three-Michelin-starred Atelier Crenn, will bring her usual passion to the discussion, tackling topics such as Covid-19, racial injustice and climate crisis in the US.
Tim Raue
The two-Michelin-starred chef-owner of Germany’s top-ranked Restaurant Tim Raue (Berlin) joins the panel debate ready to contribute his ideas on the future of restaurants.
Julia Colagreco
The director of Mirazur, ranked No.1 in The World’s 50 Best Restaurants 2019, and wife of chef Mauro Colagreco, will give her views on a more viable and sustainable restaurant model.
Richard Ekkebus
The pioneering chef from Amber in Hong Kong, and culinary director for the Mandarin Oriental group, will discuss trying to reshape the luxury restaurant model amid intermittent hospitality lockdowns and political crackdowns in Hong Kong.
