In this short video from Lima London acclaimed Italian chef Massimo Bottura talks about how Peru has positioned itself a global leader in gastronomy. He compares Peruvian food to the success that Italian, Japanese and American cuisines have had around the world.
The chef says "the world is discovering the reality of Peruvian culture" thanks in part to farmers, fishermen, cheese makers, chefs and people who dedicate themselves to the world of gastronomy.
Michelin-starred Peruvian chefs Gastón Acurio and Virgilio Martinez have contributed a great deal to the popularity of their country's food abroad.
Acurio has a restaurant empire that stretches across the globe. His flagship restaurant Astrid & Gastón (recently rebranded as Astrid & Gastón Casa Moreyra) in Lima is considered the best in Latin America.
Martinez is the owner of Lima London, the first Peruvian restaurant in the United Kingdom to earn a Michelin star. He also owns Central in Lima, which ranks among the World's 50 Best Restaurants
