The forum will take place live in Milan and stream around the world, with content to inspire all the young chefs and food enthusiasts who attend the Grand Finale of the S.Pellegrino Young Chef competition.
The format will adopt an approach of 'knowledge swapping' as we see established chefs teaching the next generation, starting from their questions, curiosity and point of view.
This first forum will focus on Taste & Creativity and show people how chefs' pursuit of this ideal can transform lives, culture and knowledge. At the same time, the focus of the event will be to inspire and teach the young chefs in the audience, to show them the impact that food can have.
Each guest speaker will present on topics that show how creativity, the drive for taste and new discoveries in gastronomy don't just result in delicious food, but also impact on society, and can have the power to change lives.
S.Pellegrino Young Chef Academy talks to Virgilio Martinez
Guests will see a presentation from Virgilio Martínez about his search for new ingredients and ideas within the local communities of the Andes and the Amazon. He will speak about how he and his team make these connections, always searching for the most delicious plate, always challenging their creativity, but at the same time transforming the lives of those communities they work with. In some cases they are able to build entire ecosystems around groups of producers, all while showing off the national identity of their country through food.
S.Pellegrino Young Chef Academy talks to the Seven Sages
The Seven Sages of the S.Pellegrino Young Chef competition will answer questions put to them by the competing chefs, about their own pursuit of creativity in the kitchen, about what forms their tastes and the role of social responsibility within the kitchen. The Grand Jury are: Mauro Colagreco, Manu Buffara, Gavin Kaysen, Enrico Bartolini, Clare Smyth and Andreas Caminada.
Due to unforeseen reasons, chef Pim Techamuanvivit, representing the grand jury, will not be attending the Grand Finale in person but will be cheering on the young chefs from afar.
S.Pellegrino Young Chef Academy talks to Massimo Bottura
Massimo Bottura will show how he uses his own creativity to take surplus ingredients and transform them into something beautiful, and how, with the same ethos, he can transform the lives of those who partake and those who benefit from his Food for Soul initiative.
