With Daniel Humm’s Eleven Madison Park reopening this week, on 10 June, after a pandemic-enforced hiatus, we have images of the new dishes.
Humm shocked the world recently when he announced that his three-Michelin-starred restaurant would reopen after the pandemic with a fully plant-based menu, containing no animal products and being completely vegan.
It was something of a new departure for the former World’s 50 Best Restaurants number one, which had become synonymous with elegant, upscale, Manhattan fine dining. Humm was known for his sophisticated handling of luxe ingredients, transforming them into beautifully elegant modern gastronomy, and his conversion to a plant-based philosophy caused shockwaves.
However, Humm has underlined the self-reflective journey he and his team have been on throughout the last year, and how their relentless reinvention has led them to a new understanding of what is 'luxury', and how chefs can play a role in elevating a more humane and sustainable way to eat.
Eleven Madison Park’s new menu is comprised of a 12-course, fully plant-based tasting menu, which comes in at the same $335 price as the pre-pandemic menu featuring the famous glazed duck and lobster dishes. The menu was created over months with chef de cuisine Dominique Roy, culinary director Mike Pyers and the kitchen team.
