Another Cracco classic is the fried egg yolk with cheese water, made with pecorino and parmesan and a marinated egg yolk spaghetti with plankton served with almond milk and lobster. The quail is stuffed with bread, paprika and lardo. For dessert, a classic wild berry meringue.
