More details on the former head chef of Noma, Matthew Orlando's, new restaurant which is set to open in July 2013 have been released. Called Amass the restaurant will open in the Refshaleøen district of Copenhagen housed within a 736 square meter loft space.
The restaurant team say they will serve 'contemporary cuisine driven by and sourced from local farms and regional purveyors' with a number of ingredients coming from the restaurant garden situated directly in front of the dining room.
Speaking about his first solo venture Orlando said: “I want the farmers to tell me the most delicious products they have on that specific day. I don’t want to tell them that I want a radish that is 5cm long if there are radishes that are 9cm long that taste better.
I want to create a restaurant that I personally would want to visit." The restaurant will feature space for up to 60 guests wuith a communal dining table for 10 and a four seater table in the kitchen which can only be reserved on a walk-in basis.
