Welcome to the second edition of the S.Pellegrino Round Table, a series that gives chefs a chance to sit around the table and enjoy great food and conversation.
In the second of four scheduled episodes we head to Prince Edward County, Ontario, Canada. The topic up for discussion is the growing importance of 'provenance' and the stories behind a meal's ingredients.
The pros share their points of view on what provenance personally means to them and how it affects their sourcing strategy.
The team also pay a visit a local vineyard, bakery and fishmonger and find out whether the sense of 'terroir' or the quality of the raw materials is more important.
Back at the round table the chefs share their thoughts on devleloping trusted relationships with suppliers as well as the careful balance between using local ingredients and retaining the freedom to choose the best ingredients.
The final question posed is whether 'provenance' is here to stay or is it just a trend?
