He's known at Noma as Santa Claus and that's because Roland Rittman brought the Copenhagen restaurant the gift of foraging. That single act transformed René Redzepi's cuisine and set in motion his inevitable rise to international fame.
The video below features the inspirational speech Rittman delivered at Redzepi's Mad Symposium, which took place this summer and gathered some of the world's most influential figures in the food industry. The speech is aptly titled Go Wild!
Foraging, as Rittman explains, is part of human nature. ''We are gatherers by nature, so we have strong memories of the places, where we found those nice chanterelles, delicious nuts or berries in the forest. We also remember each restaurant by the same primordial instinct. We connect to that certain place, when we eat there, becoming one with a place through the most ancient of sacraments.''
At the very end of his speech Rittman kneels down and asks the audience (and you!) to go out into the wild, get in touch with nature and be grateful for all of Mother Nature's gifts.
