The head chef at Noma in Copenhagen is leaving to open his own restaurant in July 2013.
Matt Orlando has been working at Noma, three times picked as the world's best restaurant, for the past two years. Honing his skills alongside head chef Rene Redzepi.
Details on the new venture are still sketchy but Matt, who has also worked at Per Se and The Fat Duck, says the restaurant will be informal with shared tables and food. Food will not be strictly Nordic like Noma but will take influence from the chef's trips around the world.
The restaurant will have a chef's garden and be situated within an old shipping depot in Copenhagen.
