Jet Loos is the winner of the S.Pellegrino Young Chef Academy Competition regional final for North Europe, and will now represent the region at the Grand Finale in Milan.
Loos, from the Netherlands but representing Norway, impressed the judges, Tommy Myllymäki, Heidi Pinnak, Kamilla Seidler, Jacob Jan Boerma and Mark Moriarty with her signature dish ‘Flavour of the Sea'.
“I come from the Netherlands and I work now in Norway, and I want to bring the best of both worlds together,” said Loos. “I used Norwegian cod and scallops, the best seafood of Norway; I used potato because in the Netherlands we eat a lot of potatoes and also in Norway.”
Also from Norway is Nils Flatmark, who won the S.Pellegrino Social Responsibility Award, for his dish 'From the Local Farm’.
“I really work for the farmers to show how fantastic their vegetables and their meat and their fish are. That’s why I’m a chef,” said Flatmark.
The Acqua Panna Connection in Gastronomy Award, went to Niko Tähti from Finland, for his dish ‘Reindeer on the Edge of a Misty Swamp’.
“I'm super humble about the award because all the mentors were voting and it was important for me to find the connection between my dish and my personal beliefs,” he said.
The last award on the night was the Fine Dining Lovers Food For Thought Award, which was won by Sebastian Garcia Jimenez, a Mexican chef representing Faroe Islands, for his signature dish ‘Ceviche con Tostada’.
“This is not only an award for me, this is an award for everyone back at home," he said. "I cannot be more thankful about this.”
