Indian food maverick Gaggan Anand has opened a permanent restaurant in Singapore. Ms. Maria & Mr. Singh is a casual restaurant that fuses the flavours of Indian and Mexican cuisines.
After he famously shuttered his eponymous two-Michelin-star restaurant in Bangkok in 2019, the chef has been a regular in Singapore, with a pop-up at the Mandala Club. The Ms. Maria & Mr. Singh concept, which lived in the lounge area there, and served light bites and cocktails, has now been established as a permanent venture.
Anand’s larger-than-life creativity takes centre stage on the menu, with a playful fusion of Mexican and Indian, featuring dishes like keema quesadilla, pork vindaloo tacos, Gaggan’s crab curry and chicken tikka masala.
According to the restaurant's Facebook page, the concept (and the name) is based on the "reflection of a love affair between a Mexican home town girl and an Indian city boy. The menu, by chef Gaggan Anand, represents home style Mexican and Indian cooking, a perfect blend of flavours and traditions".
Of course, ample consideration has been given to the beverage offering, with a range of creative cocktails and comprehensive tequila and wine lists for guests to choose from.
