Julien Royer
Julien Royer is the co-owner/chef of Odette, a modern-style French restaurant with three Michelin stars, located inside the National Gallery Singapore. Born into a fourth generation farming family in Cantal, France, Royer grew up appreciating all that mother nature has to offer. His first and most important experience was alongside Michel Bras at Laguiole.
Royer is the chef-patron of Claudine, a neighbourhood French restaurant, as well as the founder of Louise in Hong Kong, a bistro-style French restaurant with one Michelin star. He has become internationally famous for bringing a breath of fresh air to French cuisine, selecting the best products around the world and nurturing young talents. Odette is named after his grandmother and reflects her belief in always ensuring that meals are served in the most thoughtful, welcoming and hospitable way. Odette debuted on Asia's 50 Best Restaurants list in 2017, in ninth place. The same year, the restaurant was also included in Les Grandes Table Du Monde. In 2019, it received three Michelin stars and entered Asia's 50 Best Restaurants list. It currently sits at #14 on The World’s 50 Best Restaurants list.
Nancy Silverton
Nancy Silverton is co-owner of the Michelin-starred Osteria Mozza and Pizzeria Mozza, Mozza2Go, chi Spacca, Pizzette and The Barish in Los Angeles. In the autumn of 2020, Mozza opened in Los Cabos, Mexico, and Pizzeria Mozza opened in London. In 2022, Osteria Mozza opened in Singapore at the Hilton Orchard. In 2014, she received the James Beard Foundation's highest honour of 'Outstanding Chef'. In the same year, she was listed as one of the most innovative women in the food and beverage world by Fortune and Food and Wine Magazine. In 2017, she starred in an episode of Netflix's award-winning Chef's Table. Nancy is active in raising funds for numerous charities, including No Kid Hungry and Alex's Lemonade Stand Foundation in Philadelphia, New York, Los Angeles and Chicago.
In addition, she is the author of 10 cookbooks: Desserts (1986), Breads from the La Brea Bakery (1996), Pastries from the La Brea Bakery (2000), Nancy Silverton's Sandwich Book (2005), Twist of the Wrist (2007), The Mozza Cookbook (2011), Mozza at Home (2016), Chi Spacca (2020) and The Cookie that Changed My Life... (2023).
Eneko Atxa
Originally from the Basque village of Amorebieta, Eneko Atxa is the chef of the three-Michelin-star restaurant Azurmendi in Larrabetzu, located in the Basque Country. Crucial to his gastronomic training were stints in Martín Berasategui's court at Lasarte restaurant, but also in the Etxebarri brigade in Atxondo. While at Andra Mari he fortified the foundations of popular Basque cuisine. His gastronomic and philosophical approach was also influenced during his time at the three-Michelin-star restaurant Kukinoi in Kyoto, under the guidance of Yoshihiro Murata. The Azurmendi adventure began in 2005, immersed in a natural paradise, not far from Bilbao. In a place where everything is in harmony and studied in detail, it didn't take long for a first star to arrive, only to be followed by a second in 2010, and a third, that of consecration, in 2012. Today the Atxa galaxy includes many restaurants around the world: Eneko in Larrabetzu, Tokyo and Lisbon; Basque in Seville and Madrid; and Nko in Bilbao.
