A Look at Thomas Troisgros' New 'Tom Ticken'

Brazilian chef Thomas Troisgros has opened a new fast-food chicken joint called Tom Ticken in Rio de Janeiro, realising a long-held dream, delivering tasty and succulent chicken dishes to a chicken-loving nation.

"A well-made chicken in the oven is juicy. We vacuum-cook the chicken to ensure its succulence. There is no frying error and no plating error. I look for cooking mechanisms that will give me a result in which the succulence is not lost. The yummy chicken is soft and moist," says Troisgros of his 'ode to chicken' menu.

While the kitchen only opened this week, Troisgros had the original idea when living in New York and studying at the Culinary Institute of America. Being exposed to his US friends' passion and irrepressible daily appetite for fried chicken, combined with chicken being the number one most popular protein in Brazil, was something Troisgros couldn't forget. The years passed, the project matured, and after much study, Tom Ticken was born, the third brand of the T.T. Group., which also includes T.T. Burger and Três Gordos.

What's on the Tom Ticken Menu?

The menu ranges from sandwiches to a Brazilian reinterpretation of an American classic, buffalo wings.

Ticken Panko is the flagship dish: 140g of empanada drumstick, red onion pickles, organic roman lettuce and smoked paprika ketchup served inside a bun. There's also a grilled Ticken Chapado version for those watching their waistlines.

The Ticken Wings, or rather drumettes, introduce an old favourite from the Group, guava ketchup. After a slight breading in a mixture of seasoned flours, the drumettes or wings are bathed in the guava-based sauce in the classic or spicy versions (with a generous touch of Sriracha pepper) and finished with a toasted sesame mix.

A popular Brazilian street food snack 'chicken coxinha' completes the line-up. Think savoury dough, shaped into a drumstick, with a creamy chicken salad filling. French fries and nuggets serve as the ideal accompaniments.

Tom Ticken also comes with a good side serving of feel-good factor. On opening day, the brand donated 1,000 sandwiches to homeless people. From then on, for each sandwich sold, another one will be donated until completing a total of 5,000 donations.

Tom Ticken will service the South Zone of Rio in partnership with iFood and, later, Barra da Tijuca (Olegário Maciel).
