American chef, writer and food educator, Alice Waters, has revealed that she will be opening a new restaurant in Los Angeles later in the year.
The restaurant, which will be Waters' first new opening in decades, will be located at the Hammer Museum in Westwood, and will “highlight wholesome foods sourced from local farms dedicated to responsible and regenerative farming practices,” according to a museum rep.
Waters will be joined in the venture by cookbook author and former chef at her Chez Panisse restaurant, David Tanis, Chateau Marmont and Standard veteran Jesse McBride and primary forager, Oliver Monday, report Eater.
This will be Waters' third restaurant venture after her pioneering inaugural Berkeley restaurant Chez Panisse - which opened in 1971 and set the mould for California cuisine, focusing on local, seasonal and organic food - and her informal bistro, Cafe Fanny (named after her daughter), which closed in 2012 after almost 28 years. Most recently, Waters published a new book, titled We Are What We Eat: A Slow Food Manifesto.
