Humm also announced that his time of self-reflection in lockdown led him to examine the current food system and how it is broken. He therefore has taken the bold move to open the restaurant with a fully plant-based menu. While he says it is a risk, he seems fully committed to the idea, and his small kitchen team will work intensively to produce food that will be every bit as impressive as the cuisine that made EMP the best restaurant in the world. We can’t wait to eat there.
