Acclaimed Mexican chef Enrique Olvera has opened his third restaurant, Carao, at the One&Only Mandarina in Mexico’s Riviera Nayarit.
At the newly-opened hotel, set upon a clifftop overlooking a pristine blue stretch of Pacific Ocean, the new restaurant is surrounded by virgin rainforest. It is fitted out with organic materials that strike a harmonious note with the lush vegetation encompassing the resort, and the sea view is prefaced by an adults-only swimming pool, the perfect place to enjoy a cocktail at sunset.
The stunning hotel is not yet open a year, and Olvera has been enticed to take charge of the food in Carao. It will have a very distinctive Mexican heritage, but will showcase Olvera’s modern style in dishes such as pescado zarandeado, a fresh whole fish that is marinated and grilled in a traditional local fashion.
