Three-Michelin-starred Italian-Argentine chef Mauro Colagreco is to open his first overseas burger bar, CARNE, in Amoy Street in Singapore in February 2021.
Sustainably sourced burgers, perhaps with locally influenced toppings, will take centre stage on the menu, and cost between $18 and $24 alongside sides, salads and desserts and artisanal beers.
The chef from French Riviera restaurant Mirazur, currently ranked No. 1 on the World's 50 Best Restaurants list, opened his first CARNE burger bar in his hometown of La Plata in Buenos Aires in Argentina in 2016, with other outlets opening in the city since.
Early reports suggest that his first foray into Singapore will serve as a base in which to expand the concept into other parts of Asia. Speaking to Women's Weekly for the choice of location Colagreco said: "Singapore is a platform par excellence for new concepts and the avant-garde in gastronomy. From street food to gastronomic restaurants, my culinary experiences every time I visited the city have been extraordinary.”
CARNE is the also first hamburger chain in the world to be certified B Corporation, for its “mission to make a simple and accessible product, with quality raw materials, prepared with haute cuisine standards and respecting the pillars of sustainable gastronomy.”
Colagreco is no stranger to fast-casual dining, having already opened his first pizzeria, Pecora Nera, in Menton, France, back in 2019. The chef also has a portfolio of restaurants around the world including Grand Coeur restaurant in Paris, Grill 58 in Macao and Florie’s in Palm Beach, USA.
