Eighteen years after their first foray into Japan, Michel and Sébastien Bras are about to re-live the experience! The father and son duo, along with chef Simone Cantafio, will open a new restaurant in Karuizawa by June 2020.
The small town, that's located 1,000 meters above sea level and one and a half hours from Tokyo, "is the refuge of Tokyoites who come here to seek freshness in summer, marvel at its colorful autumns, and dive into its soothing onsens all year round" , reads the official statement.
On the design side, the place will be given transparency by the Japanese architect Kengo Kuma. The restaurant will "wrap around a garden", which will be the main source of the restaurant's cuisine "magnified in pure Bras expression."
On a daily basis, the dishes will be cooked by Simone Cantafio, who worked in the kitchen at le Suquet, the parent company of the Bras family in Laguiole, France and who now runs Michel's and Sébastien's first open restaurant in Japan, which opened in 2002 in Toya on the island of Hokkaido.
