A shower of Michelin stars rained over a united Spain and Portugal last night, in what was a highlight of a very difficult year - one in which all the gastronomic scene's key players have struggled, and yet continue to fight for a better future for all.
The Michelin Guide Spain and Portugal 2021 was revealed during a virtual awards ceremony held at the Real Casa de Correos in Madrid on Monday 14 December and was presented by Cayetana Guillén Cuervo and Miguel Ángel Muñoz. During the event, the most heartfelt words were: "Thank you, chefs," a sentiment reiterated by the Mayor of Madrid, José Luis Martìnez-Almeida, the President of the Community of Madrid, Isabel Diaz Ayuso, and Gwendal Poullennec, international director of Michelin Guides, who appeared at various moments throughout the ceremony in the form of a hologram.
With three restaurants obtaining two Michelin stars, and 21 new Michelin one-star restaurants, the 2021 guide boasts a total of 234 starred restaurants in Spain and Portugal, of which 11 of those hold 3 Michelin stars.
During the ceremony, 21 restaurants also won their first 'green stars', also a first in the history of the Michelin Guide Spain and Portugal: a recognition that Michelin introduced this year to reward restaurants with sustainability at the heart of their cooking philosophy.
The moment when the three new two-Michelin-star restaurants were announced was a highlight of the evening. The three chefs and their brigades found out online, live on camera, that they had received the second star: Bo.tic en Corçà, Girona (Albert Sastregener and Cristina Torrent, chef and sommelier), Cinc Sentits in Barcelona (chef Jordi Artal) and Culler de Pau in Pontevedra (chef Javier Olleros).
The 11 chefs who saw their three Michelin stars reconfirmed for their restaurants in the 2021 guide also appeared at the event, with the exception of Dabiz Munoz (DiverXO) who instead attended the ceremony physically to represent all his colleagues, reiterating "the luxury and responsibility" that the confirmation of such a recognition entails for a chef.
