There's no doubt this has been a great year for Brazilian chef Alex Atala. Aside from being named one of Time's 100 most influential people and speaking at events like MAD3, the chef is also celebrating the release of his first cookbook.
Called D.O.M.: Rediscovering Brazilian Ingredients by Phaidon, the cookbook is a colorful array of recipes, stories and beautiful pictures of Atala's homeland. Long known for his passion for Amazonian ingredients, Atala scours his native land for unique flavors he can build upon at this restaurant D.O.M. in Sao Paolo, which currently ranks 2nd on the Latin America's 50 Best Restaurants list.
In his book you'll find 65 recipes made with exotic ingredients such as Fresh Heart of Palm with Scallops and Coral Sauce, Lightly Toasted Black Rice with Green Vegetables and Brazil Nut Milk, Lamb Hind Shanks with Yam Puree and Pitanga; and Priprioca, Lime, and Banana Ravioli, a recipe the chef was kind enough to share with FDL some time ago.
There are 150 color photographs that document Brazil's vibrant people and beautiful landscapes. The stunning food photography was the work of Sergio Coimbra while the book's gorgeous design was the work of R2 Design in Porto, Portugal.
Although some of the ingredients will be hard to find, this cookbook will inspire you to create your own masterpieces with local and seasonal ingredients.
