‘Why Waste?’ with Massimo Bottura, is the new video series that shows us how to reduce food waste at home by turning leftovers and trimmings into delicious meals. Check out the infographic below for some of the facts on food waste.
Chef Massimo Bottura is passionate about reducing food waste. His philanthropic work with his non-profit Food For Soul builds community and feeds those in need, by transforming food destined for the scrap heap, into delicious, nourishing food. Now Bottura has teamed up with Fine Dining Lovers on a four-part video series, made together with his kitchen team, which shows us how to think differently about our leftover food – 'Why Waste?'.
Food waste is a global problem with nearly 1 billion tonnes of the food produced never making it to hungry mouths. More than half of that food waste happens in the home (61%), so it is crucial that we learn to think about food waste in a completely different way. As much as 29 million tonnes of dairy is wasted every year in Europe alone. Dairy food production is water and carbon-intensive, producing vast amounts of carbon dioxide and greenhouse gasses that contribute to global warming.
While food losses occur at all points along the supply chain from food production to retail, more than half of food is wasted at home. Developed countries such as Europe and the United States are the biggest culprits, but the problem is worldwide with 45% of fruit and vegetables wasted globally and never making it for human consumption.
