Although very young - he was born in 1971 - Violier has already become a rising star of European fine dining: after 16 years of working closely with his mentor Philippe Rochat, in April he became the new chef-patron of the Swiss restaurant. But there's more: a few weeks ago the prestigious Gault Millau guide awarded Violier as 'Chef of the Year' 2013.
Fine Dining Lovers travelled to Crissier and had the opportunity to join the chef in the kitchen, tag along to meet his suppliers, and understand why he considers his work exactly like an orchestra.
