Red Cabbage Salad with Pomegranate and Brazil Nuts

ingredients
Cabbage
500 g, red, coarsely grated
Carrots
300 g, coarsely grated
Apple cider vinegar
4 tbsp
Extra virgin olive oil
4 tbsp
Cumin
1/2 teaspoon, ground
Salt
Pepper
freshly ground
Pomegranate
1 , seeds only
Nuts
60 g, Brazilian, chopped
Preparation
To prepare the red cabbage salad mix together the cabbage and carrots.
Whisk together the vinegar, oil, cumin, salt and pepper and toss with the cabbage and carrots.
Leave to stand for 30 minutes.
Place the red cabbage salad on serving plates and sprinkle over the pomegranate seeds and nuts.
