Mint lamb chops

If you love meat, try the delicious combination of lamb chops and mint. Lamb chops are prized for their tenderness and rich flavour. They are considered the most premium and succulent cut of lamb and can be prepared in various ways, including frying and grilling, and are often enhanced with seasonings and flavours. The combination of mint and lamb chops is a match made in heaven. The sweet fragrance and refreshing flavour of mint perfectly complement the rich and tender lamb.

ingredients

Lamb chops
8, trimmed
Mint leaves
1 tbsp (1.88g), fresh
Lemon juice
2 tbsp (30ml)
Olive oil
2 tbsp (30ml)
Garlic cloves

Peppercorns
¼ tsp (0.6g)
Fine salt
¼ tsp (1.5g)

Method

Step 01

Trim fat from chops. 

Step 02

Place lamb chops in a bowl or a glass dish.

Step 03

Finely chop mint leaves and garlic, then put them in a jug. Crush peppercorns, then add them to the jug. Pour in olive oil and lemon juice, then mix well – the marinade should have a thick consistency.

Step 04

Pour evenly over chops and turn to coat. Marinate in the refrigerator for at least 40 minutes or up to 12 hours.

Step 05

Drain chops, discarding marinade. Sprinkle chops with salt.

 

Step 06

Grill chops on a rack of an uncovered grill directly over medium heat to the desired doneness, occasionally basting with the marinade, turning once. 

 

Step 07

Sprinkle with remaining mint. Season with salt, then serve.
