Vegan Black Bean Stew with Chipotle

ingredients
Olive oil
2 tbsp
Onion
2 large, diced
Garlic
6 cloves, chopped
Black beans
575 g, canned, rinsed and drained
Tomato sauce
450 g
Tomatoes
2, diced
Cumin
2 tsp, ground
Chipotle
1 tsp
Coriander
55 g, fresh, chopped, divided
Pepper
75 g, diced, red, yellow and green
Preparation
Heat olive oil in a large pot over medium-high heat.
Add the onions and saute until translucent about 5-7 minutes.
Add the garlic and continue to cook for another minute.
Stir in the black beans, tomato sauce, diced tomatoes, cumin and chipotle.
Reduce heat to medium-low and simmer for 5 minutes. Add ¾ cup cilantro and simmer another 2 minutes. Stir in the bell peppers and remove from heat. Garnish with remaining cilantro and serve.
