Odette, housed in the National Gallery Singapore is helmed by French chef Julien Royer, who moved to Singapore in 2008 and opened the restaurant in 2015.
Since then he has created a contemporary French cuisine embued with Asian flavours at Odette that pays homage to the seasonality of local produce. It is a philosophy of respecting the integrity of each ingredient and showcasing its brilliant flavours.
Odette, along with French restaurant Les Amis, became the city's new three Michelin star restaurants in the 2019 Michelin guide to Singapore. Already with two stars, the Guide acknowledged Royer's exemplary work in the kitchen.
The chef’s culinary outlook was honed through his experiences working in France working under Michel Bras in Laguiole and Bernard Andrieux in Clemont Ferrand in the heart of Auvergne. Time spent in the French West Indies and Polynesia widened his knowledge, before moving to London to work as sous chef to Antonin Bonnet at Michelin-starred Mayfair restaurant, The Greenhouse.
Royer named the restaurant ‘Odette’ after his grandmother.
“I owe everything that I am to my family, especially my grandmother, Odette. She showed me how the most remarkable dishes can come from the purest ingredients and taught me the importance of adding that ‘little something’ to create dishes that excite the palate and fill the heart,” says Royer.
Odette currently sits at #1 on the Asia’s 50 Best Restaurants list as well as at #18 on The World’s 50 Best Restaurants list.
