Puntarelle
1 head
Anchovies
6 fillets
Garlic
1 clove
Olive oil
75 ml
Capers
5 g
Red wine vinegar
5 ml
Chili pepper
A pinch, dried
Preparation
- Slice very thinly puntarelle heads place in iced water leave for 5 minutes - remove dry.
- For Dressing, Chop anchovy fillets, clove of garlic with salt, add chilli, vinegar and mix together to a paste.
- Add olive oil.
- Add dressing to puntarelle, mix together and serve.
