Potatoes
600 g, peeled and diced
Tomatoes
6 each
Onion
1, diced
Garlic
1 clove, finely chopped
Tomato puree
15 ml
Sugar
To taste
Tabasco
To taste
Brown sugar
To taste
Oregano
15 ml, chopped
Olive oil
30 ml + some for drizzling
Salt
To taste

Preparation

  • Heat the oven to 180°C (160° fan) 350°F gas 4.
  • Grease a baking tray.
  • Put the potatoes on the baking tray.
  • Sprinkle with olive oil and sea salt and cook for about 20 minutes until golden brown, turning several times.
  • Drop the tomatoes into boiling water for a few seconds, then skin, quarter, deseed and dice.
  • Heat 30 ml oil in a frying pan and gently cook the onion and garlic until translucent.
  • Stir in the tomato purée and tomatoes.
  • Simmer for 6-8 minutes.
  • Add sugar, salt and Tabasco to taste.
  • Put the potatoes into bowls, spoon the tomato sauce over and serve sprinkled with oregano.
