Chef Alain Passard is famous for his garden to table ethos and at his three Michelin star Paris restaurant L’Arpège, the vegetables take centre stage.
So when it comes to cooking vegetables, Passard is a great chef to learn from. In the video below from The Mind of a Chef, we see him cooking a simple dish that sings of the summer garden in the company of Protégé Ludo Lefebvre, who still seems keen to take in all that his mentor is doing.
Passard is all about extracting as much flavour as possible from fruits and vegetables, using the same cooking processes as you'd use for meat, dressing his dishes with the cooking juices and, naturally, using plenty of butter.
