The world of vegan and vegetarian sushi is exciting. Zero fish doesn't mean zero flavor. In fact, omitting seafood makes this delicious Japanese food budget friendly.
Vegetarian sushi comprises a broad spectrum - there are traditional rolls and lighter options prepared with quinoa, couscous and even tofu - all of which we'll discuss below.
Vegetarian Sushi Sans Algae
The preparation of vegetarian sushi doesn't necessarily require algae, which is known as nori.
Classic nigiri can easily be topped with avocado and wasabi instead of nori. Or you can get pretty creative and make a roll using with thinly sliced zucchini (which can easily be accomplished with a mandolin or vegetable peeler).
Here's how to make the roll pictured above: roll a slice of zucchini over a small ball of sushi rice (or your preferred filling) and coat the exterior in cream cheese. Finish by rolling in sesame seeds.
The final result is stunning and scrumptious - all without an ounce of fish.
Italian Vegan Sushi
This wonderful version of vegan sushi is inspired by the flavors of Italy.
Try swapping sushi rice for arborio and layering tomatoes, zucchini, basil, tomatoes, parsley and a touch of balsamic vinegar.
