Coconut water is a superfood in its own right. It is hydrating, naturally low in calories and rich in minerals and electrolytes. So can this seemingly perfect drink get any better?
Enter coconut water kefir, a fermented version of the beloved tropical drink, which is hailed as the antidote to sugar cravings, improves digestion and promotes clearer skin. Who wouldn’t want those benefits?
As with all fermented foods, coconut water kefir contains a lot of beneficial bacteria. It tastes a bit sour, similar to the flavor of kombucha, but it is a great vegan alternative to traditional dairy kefir.
How to Make Coconut Water Kefir
The trick to making your own coconut water kefir is in using water from raw coconuts. Don’t get the stuff in the can or box because those waters have been pasteurized so they won’t be able to ferment.
You can obtain water from young Thai coconuts or the brown variety. Be sure to strain it to remove any bits of coconut pulp or fibers.
You’ll also need a kefir starter. This is a culture widely available in the refrigerated section of many health food stores.
With just two ingredients - fresh coconut water and kefir starter - you can make this wonderful health tonic. You simply warm the coconut water to room temperature, add the culture, blend well and let sit overnight.
