There’s nothing worse than walking away from the stove only to return to a pan of dry, overcooked ingredients – it’s just so disheartening.
Unfortunately there aren't many ingredients you can’t overcook but America’s Test Kitchen have produced a new video that suggest mushrooms could have a magic property that means they can’t be overcooked.
The video shows a test done on mushroom, zucchini and beef tenderloin to understand how quickly each ingredient cooks.
It shows that mushrooms are a resilient ingredient that are very hard to overcook. This is down to a polymer called chitin which makes up the cell walls. It is very resistant to heat and the reason why mushrooms are one of the most forgiving ingredients around.
