If herbs had personalities they would be very different indeed. Shaun Walker writing in The Guardian likens rosemary and thyme to warm and generous friends, parsley to a boring acquaintance and coriander to an exotic and sultry lover.
And here at FDL we'd have to agree. There is something both alluring and mysterious about coriander, but it's not for all. On a recent trip to Lisbon I was more than delighted to find generous handfuls of chopped coriander appear as a garnish, much to my dining companion's dismay. Those that are keen on coriander will relish any coriander recipes, like guacamole, even more so for their addictive coriander content.
When treated right coriander is an exotic and versatile herb. One of the oldest herbs in existence and it comes from the carrot family. Coriander is commonly found in Indian, Thai, Mexican and Chinese cooking. In other countries, such as Russia it is often found in salads. Fresh coriander is best added at the end of the cooking time as heat can destroy its delicate flavour.
The coriander recipes we have collected below highlight just how versatile this herb is. From refreshing summer drinks to Thai soups and hearty vegetarian casseroles, try giving coriander a chance, you never know you just might fall under its spell.
