1. To activate the raising process without using traditional baking powder, you just need full fat yogurt and some baking soda.
2. All the liquid ingredients have to be at room temperature to prevent thermal shock which could spoil the cake. Take the liquid ingredients out of the fridge one hour before starting to mix them, or warm them slightly in the microwave oven.
3. When mixing the ingredients, use a folding movement that starts from the bottom of the bowl and proceeds upwards: this incorporates more air and makes the end result softer and lighter.
4. Preheat the oven to a temperature that is slightly higher than that required to bake the cake. This prevents the oven temperature from dropping excessively when you open the door to pop the cake in.
