Gluten-free, low in carbohydrates, rich in magnesium, phosphorus and iron: we are talking about quinoa, a seed that behaves like a cereal and offers super nutritional properties and great versatility in cooking. But how can we actually cook quinoa? How can this super food be used in various recipes? Here is a selction of ideas for cooking with quinoa.
QUINOA AS A FIRST COURSE
The most common way to cook it is to treat it like a cereal, such as spelt or rice, and use it to make hot and cold first courses with vegetables or fish. There are many recipes available but if you want a super dish made from this super food, try it with salmon and dried fruit: a concentration of healthy fats and flavour. For a cold first course, try this recipe with feta cheese and sweet peppers.
FOR MAKING RISSOLES AND HAMBURGERS

QUINOA BISCUITS
Its use is not limited to savoury dishes: quinoa can also be adopted to make deliciously light biscuits. Also in this case, it has to be cooked first and then mixed with flour and sugar, with the addition of a fruit of your choice, chopped into small pieces or in the form of fruit juice for instance, or dried fruit such as raisins.
