Dominique Ansel has opened his new kitchen in New York and Grub Street have published a look at a meringue based dessert that the chef sets on fire for guests.
The chef’s table experience inside the kitchen allows diners the chance to sample a tasting menu of wonderfully crafted desserts which are themed around ‘firsts’. First kiss, first word, first heartbreak.
The flaming meringue heartbreak dessert (seen above) is Ansel’s take on a baked Alaska, accept with the special touch we’ve come to expect from the chef. Grub Street report that a small love note on top of the base of chocolate almond sponge cake is set on fire which makes each perfectly crafted meringue petal slowly fall off the dessert - a play on the ’he loves me, he loves me not’ game we all played as kids.
This is just one of the desserts on the tasting menu at the new Kitchen, the menu online also shows a number of interesting sounding creations like the garlic bread croissant, Guinness beer soaked brioche with malt cream and a 48-hour tea tiramisu.
The new Dominique Ansel Kitchen offers diners the chance to sample a tasting menu of desserts and also a range of savoury dishes created by the pastry chef who is famous for his cronut creation.
