If you’re looking for a nice quick method for making an Asian inspired soup look no further than this really easy recipe from chef Gordon Ramsay.
The recipe is for a miso soup with mushrooms, spinach, spring onions and fresh ginger and the chef promises it takes just 10 minutes to make.
If, like David Chang, you’re unimpressed by the miso pastes on offer in your closest store, cut it with butter, it will help reduce the saltiness from the high sodium content and lift the other flavours in the dish.
It’s finished with a poached egg cooked directly inside the soup - an extra level of luxury which really can’t be beat - unless you want meringue of course.
If store bought Miso just isn't cutting it for you, you could also have a go at making your own. There's a nice video of the Nordic Food lab making a pea miso and here's a breakdown of exactly how miso is produced.
