What is a stir-fry?
A typically Chinese cooking technique, a stir-fry involves frying ingredients in a small amount of very hot oil while stirring them in a wok – hence the name! It is a quick, easy and healthy technique not all too dissimilar to the Western technique of sautéing. Stir-fries are also extremely versatile in terms of adding whatever you have to hand.
Stir-fry with cashew nuts and chicken
Simple seasonings like garlic and soy sauce give this stir-fry recipe plenty of umami. For the ultimate meal, garnish with spring onions and serve with rice.
