In yet another nod to the growing power and popularity of Mexican cuisine, Thomas Keller has opened a new Mexican restaurant in Yountville, California.
Keller, who is known for his dedicated approach to high-end French cuisine and for operating not one but two three-star Michelin restaurants in America, has appointed the help of Kaelin Ulrich Trilling to head up his first ever Mexican restaurant, called La Calenda.
The cuisine at the restaurant is from across the Mexican region with a particular focus on the rich and delicious food heritage of Oaxaca. This is where Trilling is from and the menu promises to focus on 'traditional cooking' methods with 'artisanal ingredients'.
The menu, which you can see below, features tacos, tostada, tamales and enchiladas, plus a number of delicious sounding mains served alongside stone-ground tortillas. Dishes that jump out to us: Cachete de Res en Mole Chichilo which is braised beef cheek with mole chichilo, charred jalapeño escabeche and tortillas. Other jump-outs are the grilled chicken with black mole and grilled adobo steak.
This is Keller's first step into Mexican cuisine, the chef is getting into one of the most creative, exciting and evolving foods scenes in the States right now.
