Thierry Marx, the French chef specialised in molecular gastronomy and head chef at the Mandarin Oriental in Paris, always surprises with yet ever more innovative ideas. His latest project is Marxito, a healthy street food brand where the chef will offer a revisited sandwich in the form of two buckwheat pancakes, filled with mainly organic and vegetarian ingredients.

The famous Beaupassage, a vast urban project initiated by Emerige in the 7th arrondissement of Paris, was inaugurated at the end of August. It's here that you'll find restaurants, pastry shops and bakeries opened, by among others Yannick Alléno (Allenothèque), Thierry Marx (La Boulangerie), Anne-Sophie Pic (Daily Pic), Olivier Bellin (Mersea)or Pierre Hermé (Le Café)... Julia Sedefdjian, the youngest Michelin starred chef in France in 2016, opened her first bar on 6 September, a few months after the opening of her first restaurant Baïeta. Here you can sip good rum cocktails and sample Caribbean-influenced cuisine with small "typical and tasty" dishes like subkaia papaya & mango, a ferocious avocado (cod-based and chilli), chicken Chiquetaille or lobster with vegetarian pepper butter.

After a few years in the United States, Frédéric Duca returns to Paris to open Rooster in mid-October, his brand new restaurant located in the 17th arrondissement of Paris.
"I want to write my story in this place, Rooster will symbolize my south of France origins, my Parisian experiences and the New York twist that I loved," explains the Marseille of his new Paris venture.

Already established in the capital for many years, two Michelin starred chef Hélène Darroze once again shares her talent and know-how at the new address, Joia, located in rue des Jeuneurs in the 2nd arrondissement of Paris. On the menu are a la carte dishes inspired by her childhood in Southwest France where gourmets will be able to taste hake from Saint-Jean de Luz roasted with garlic sauce chimichurri or Rouget stuffed with chipirons or neck of lamb confit with ras-el-hanout.

FROUFROU AND JUAN ARBELAEZ'S CUISINE
Juan Arbelaez will sign the map of Froufrou in September, a new site bought by the Moma Group. The establishment, located in the Edouard VII Theater, will replace the historic Café Guitry.
On the menu? Small sharing dishes with a "modern bistro" style kitchen designed to be "subtle, friendly and elegant at the same time."

ASTAIR AND GILLES GOUJON'S COOKING
Astair, a Parisian brewery that aspires to revolutionize the sector, opens in mid-September. Behind the ambitious project is the trio at the head of the Farago group, Charles Drouhaut, Jean-François Monfort and Jean Valfort. For this new adventure, the three employees also drew on the help of Gilles Goujon to develop the menu.

DUCASSE SUR SEINE BY ALAIN DUCASSE
