The Alcalde restaurant in Mexico has been picked as the winner of the One to Watch award ahead of Latin America’s 50 Best Restaurants ceremony, which takes place in Mexico City September 26.
Paco Ruano opened the Alcalde restaurant in 2013 with a focus to discover, cook and showcase traditional Guadalajaran cuisine.
The beautiful, natural looking restaurant serves Ruano’s creative blend of traditional culture and flavour with the all refinement of modern gastronomy.
Organisers say his dishes of roasted sweetbread with ashes and milk, and a scallop ceviche with citrus fruits are two of his standouts.
Ruano will receive his award during Latin America’s 50 Best Restaurants ceremony which will be live-streamed on the site.

Sweetbread with roasted corn, ashes and milk.

"Lamb to the straw" baked all night in a bed of straw and the smell of herbs, served with corn on the cob consomme, cactuses and portulacaceae.
