Those who fantasise about eating their dinner amongst the lush, pine green vegetation of a Nordic forest – you know who you are – should head to a new Copenhagen restaurant called Väkst (Danish for ‘growth’).
GARDEN EXPERIENCE
Set over two floors, the new eatery from the Cofoco group, has a greenhouse overflowing with plant life at its core, creating a “lush garden experience in the middle of the city.”
A fresh and concise menu of New Nordic Cuisine from chef Jonas Christensen – can it still be called ‘new’? – includes pork with burnt cabbage; cranberries and horseradish; grilled lettuce and thyme; and beef tenderloin with white cabbage and asparagus, alongside a refreshingly straightforward, exclusively European wine list.
RUSTIC AND SOCIAL
According to Christensen the Copenhagen restaurant’s ethos is to create “rustic, social meals”, though the plants grown in the greenhouse are not used in the kitchen. “They should be seen as a reflection on the focus on greens and plants in the kitchen,” he says.
Väkst is yet another addition to the Danish capital’s enviable array of New Nordic Cuisine-style restaurants, such as Amass and the daddy of them all, Noma.
