Silo is a zero waste restaurant in Brighton that claims to be the first restaurant of its kind in the UK, even taking soap out of the equation in the toilets by using special water and lighting that helps to kill germs.
Their idea is to create everything, or as much as possible, at the restaurant, saying: “By creating everything on site from its wholest form we can capture real food, and real food tastes better.”
The food is simple with menus constantly changing to incorporate ingredients in the short windows they are available.
Dishes like Silo Yoghurt with freshly rolled oats, poached quince and frozen plum juice, wild – venison haunch, lentils & fermented ramson scarlet kale, and pastries made with the bread from the day before are all served on plates made from recycled plastic bags.
It’s well worth a stop if you’re in the Brighton area.
