After months of anticipation, Heston Bluementhal's new restaurant at Heathrow airport opens its doors today. The Perfectionists' Café is located at Terminal 2 and is equipped with a wood burning oven (the first ever at Heathrow) and will serve British favorites like burgers and fish and chips but also molecular treats like liquid nitrogen ice cream.
Blumenthal claims the newly built venue will reflect "the heyday of 1960’s passenger flights", a time when, "air travel was deemed glamorous and travelers dressed in their best to fly.” For passengers with a discerning palate, this means an end to soggy sandwiches and limp fries.
Just last month FDL caught up with Ashley Palmer-Watts, executive head chef at Blumenthal’s Fat Duck Group, who and has worked closely with the chef for over 15-years. The chef spoke to us about the new restaurant, how much research went into developing the dishes and just how it will all look once complete. Check out our exclusive interview below:

The Perfectionists' Café can accommodate 130 diners and features a multi-sensory bar and a deli with the first British-made prosciutto-style ham, according to previous reports.
We'll be keeping a close eye on the situation so stay tuned for more information on the big opening of Blumenthal's Heathrow restaurant.
