Where does one go after working at the world renown Noma in Copenhagen? For Trevor Moran, the next stop is Nashville.
Moran, who just landed his gig as the new executive chef at The Catbird Seat, had been working for chef René Redzepi since 2009. He worked his way up to sous chef and formed part of the roller coaster ride the staff at Noma experienced when the restaurant thrice topped the World's 50 Best Restaurants list sponsored by S. Pellegrino and Acqua Panna before sliding into second place this year.
Moran is replacing Erik Anderson, who left to Minneapolis, and will "slowly change the menu" at the 32-seat Catbird Seat, according to The Daily Meal. Diners can expect the new cuisine to reflect Moran's Irish background and Nordic influences.

Moran is one of a handful of Noma alumni, including Blaine Wetzel at The Willows Inn in Washington, who've gone on to revolutionize dining in America.
