Want to know what Daniel Humm and Will Guidara really think about the New York food scene? The dynamic duo from Eleven Madison Park, currently the best restaurant in America and fifth best in the world, chat candidly about food in New York in this interview with Animal Gourmet.
Humm begins by explaining that New Yorkers' attitude towards food is ''we get anything we want,'' a philosophy deeply rooted in the city being a multi-cultural melting pot.
When asked about what makes New York so unique in terms of food, Humm is quick to point out the many dishes and beverages created in the state. He mentions the black and white cookie, Bloody Mary, eggs Benedict, cheesecake and potato chips, to name a few.
Humm, who grew up in Switzerland, seems passionate about the terroir in New York and sings praises about Hudson Valley, coincidentally the place where Guidara was raised. The chef stresses that only local seasonal foods are used at his acclaimed restaurant. Could that be the secret to its success?
