When asked about what makes New York so unique in terms of food, Humm is quick to point out the many dishes and beverages created in the state. He mentions the black and white cookie, Bloody Mary, eggs Benedict, cheesecake and potato chips, to name a few.
Humm, who grew up in Switzerland, seems passionate about the terroir in New York and sings praises about Hudson Valley, coincidentally the place where Guidara was raised. The chef stresses that only local seasonal foods are used at his acclaimed restaurant. Could that be the secret to its success?
